Make Up Some Mango Pancakes for the One You Love on Sweetest Day



One holiday that will find celebrated in the Midwestern United States, parts of Northeastern United States, Texas and part of Florida is a day known as Sweetest day. While you may be like me and not familiar with such a holiday it is a day to share romantic deeds or expressions. Some accuse the candy company for solely increasing sales of sweets.

Sweetest day was on October 10, 1921 in Cleveland. The day was first planned by a committee of 12 confectioners. Over 20,000 boxes of candy to "newsboys, orphans, old folks, and the poor" It was meant to bring sweets to those that may not have had them

Today I encourage you to be generous even in the smallest ways. Small tokens improve the lives of those around us who are suffering or going without. This day originated at candy day in 1916 but has came to mean so much more. Today why not treat the ones you love. Make up some great dish like these Mango pancakes. I hope you enjoy and have a sweet day




1/4 cup cream cheese
1/2 cup mango pulp, pureed
1 cup flour
1 cup milk
1 egg
1 tsp baking powder
1 tbsp vegetable oil
2 tbsp sugar
a pinch of salt
cut mango for garnish




Whisk cream cheese and sugar together. Add mango puree and continue whisking. Add egg, milk, and oil. Add dry ingredients and fold into the batter. Heat a nonstick pan and our batter on it. Cook on low heat.Flip once the bubbles appear on the sides. Cook until browned. Serve with mangoes.
